Shelf life: House-made 1:1: about 2–4 weeks refrigerated. A richer 2:1 keeps longer.
Storage: Refrigerated in a sanitized, dated, sealed bottle.

Dissolve equal weights of sugar and water over gentle heat, stirring — never boil; boiling concentrates the ratio and drifts the flavour. Cool, bottle in a sanitized, dated bottle, refrigerate. Discard on cloudiness, yeasty smell, bubbles or mould — and discard any unlabelled bottle on sight.
Pure added sugar. WHO guidance keeps added sugars under 10% of daily energy, ideally under 5%, so syrup volume is worth counting.
