Date syrup (dibs)

Energy: ~280–300 kcal / 100 g (typical) (planning figure — the product label is the final reference)

Shelf life: Commercial sealed: long, per label. Opened: sealed and refrigerated, months. House-made: treat like a house syrup — weeks, refrigerated and dated.

Storage: Cool and sealed; refrigerate after opening. It pours thick — a warm water bath loosens it.

House version: simmer pitted dates in just enough water to cover until fully soft, press through a fine sieve, then reduce gently to a pourable syrup — no added sugar needed, never a hard boil. Sanitized, dated bottle, refrigerated. Most bars buy it ready; the house version wins on aroma.

Carries some of the date's minerals — potassium and magnesium come along — which white sugar cannot claim. It is still concentrated free sugar though, and counts fully toward WHO added-sugar limits (under 10% of daily energy, ideally under 5%).
