Frozen beverage dispenser
Holds a sweetened liquid in continuous slow motion just below the point at which it would freeze solid, so it stays pourable as a slush and can be dispensed on demand.
Freezing-point depression is the entire mechanism. Sugar dissolved in water lowers the temperature at which ice crystals form, and the machine holds the mix inside the narrow band where crystals exist but never join into a solid. A refrigerated bowl or cylinder chills the mix while an auger or paddle keeps it turning, and that motion does two jobs at once: it scrapes crystals off the cold wall before they can grow together, and it keeps the whole batch at one temperature rather than frozen at the wall and liquid at the centre. THE MIX IS PART OF THE EQUIPMENT SPECIFICATION, NOT A FREE CHOICE. Get the sugar concentration wrong in either direction and the machine cannot hold the band at all: too little and the batch freezes toward a solid that stalls the auger, too much and it never crystallises and the machine dispenses a cold syrup. A barista who dilutes a batch to make it stretch has moved the machine's operating point, and the fault presents as a machine fault. Two consequences follow that are usually discovered after purchase. The machine RUNS CONTINUOUSLY, including overnight if the product is to be ready at opening, so it is a standing energy draw and a standing heat source in the bar rather than an intermittent one. And the bowl holds a food at temperature for a long period in a housing with seals, an auger shaft and a dispense valve — which makes the strip-down clean, not the purchase, the defining cost of owning one.
- THIS MACHINE IS JUSTIFIED BY SUSTAINED, PREDICTABLE DEMAND AND BY NOTHING ELSE. It converts a per-drink labour cost into a standing cost — energy, a batch, a bowl of product and a daily strip-down — that is paid whether or not a single one sells. If frozen drinks are occasional or seasonal on your menu, the blender you already own is the correct machine, and the dispenser you buy instead will be cleaned less often than it should be within a month.
- Cost the CLEAN before the purchase, in labour and in its position on the closing routine. Every bowl is a strip-down: auger out, seals out, valve dismantled, all of it washed, sanitised and reassembled correctly. Ask to watch it done and timed by somebody who does it daily, and then ask who on your rota will be doing it at the end of a long shift.
- Count bowls from what you will genuinely sell, not from what the machine can carry or what looks generous on a counter. Waste is per bowl, per day, and it compounds silently because an unsold batch never appears in any figure the bar looks at.
- Treat the MIX as a specification handed down by the machine. The sugar concentration is what sets the freezing point the machine is engineered around, and the supplier states what the machine requires. Your recipe has to live inside that constraint; a batch diluted to stretch it, or sweetened by eye, is an equipment fault being created deliberately.
- Decide the end-of-day question in writing before you buy, because it changes the labour and the waste completely. Is the bowl emptied, stripped and cleaned nightly, or is product held? That answer is set by the site's food-safety standard and by the product, never by what is convenient at close, and the machine you choose should be the one that makes the required answer easy.
- Site it for heat and for sightline together, and accept that those two pull apart. It runs continuously, so its heat is continuous and it competes with the ice machine for the same air; but a transparent bowl positioned where nobody sees it has surrendered the only advantage it had over a blender.
- Confirm with a licensed electrician that the position can carry a continuous load, not an intermittent one, and confirm it before the joinery is built. Continuous duty is a different question from peak draw and the local code governs. This site states no amperages.
- Ask what the bar serves when a bowl has to come out of service mid-day, and put the answer on the menu plan rather than leaving it to the shift. A bowl emptied at lunchtime is a menu item gone for the rest of the day, because the product cannot be made to temperature during service.
