Frozen beverage dispenser

Holds a sweetened liquid in continuous slow motion just below the point at which it would freeze solid, so it stays pourable as a slush and can be dispensed on demand.

Freezing-point depression is the entire mechanism. Sugar dissolved in water lowers the temperature at which ice crystals form, and the machine holds the mix inside the narrow band where crystals exist but never join into a solid. A refrigerated bowl or cylinder chills the mix while an auger or paddle keeps it turning, and that motion does two jobs at once: it scrapes crystals off the cold wall before they can grow together, and it keeps the whole batch at one temperature rather than frozen at the wall and liquid at the centre. THE MIX IS PART OF THE EQUIPMENT SPECIFICATION, NOT A FREE CHOICE. Get the sugar concentration wrong in either direction and the machine cannot hold the band at all: too little and the batch freezes toward a solid that stalls the auger, too much and it never crystallises and the machine dispenses a cold syrup. A barista who dilutes a batch to make it stretch has moved the machine's operating point, and the fault presents as a machine fault. Two consequences follow that are usually discovered after purchase. The machine RUNS CONTINUOUSLY, including overnight if the product is to be ready at opening, so it is a standing energy draw and a standing heat source in the bar rather than an intermittent one. And the bowl holds a food at temperature for a long period in a housing with seals, an auger shaft and a dispense valve — which makes the strip-down clean, not the purchase, the defining cost of owning one.
