Cleaning vs. sanitizing — two separate required steps

Wiping a counter until it looks spotless, and making it safe to prepare food on, are two different achievements — and a beverage operation that only does the first has done half the job. Cleaning is the physical removal of visible soil: spilled milk, syrup residue, coffee oils, dust — usually with detergent, water, and some scrubbing. Sanitizing is a separate step that follows cleaning: applying a chemical (or heat) sufficient to reduce pathogens on that already-clean surface down to a level considered safe, not to zero.

Skipping straight to sanitizing without cleaning first mostly wastes the sanitizer — organic soil shields bacteria from it and can chemically neutralize some sanitizer types before they ever reach the surface — so the order (clean, then sanitize) is not optional, and neither step substitutes for the other.\n\nThree sanitizer families cover most bar operations. Chlorine-based (bleach) sanitizer is common, inexpensive, and fast-acting, but breaks down with heat, light, and time, and is corrosive at the wrong concentration. Quaternary ammonium («quat») sanitizer is gentler on equipment and holds its strength longer once mixed, but is less effective against some pathogens if concentration or contact time is short.

Iodine-based sanitizer is effective and visibly colored (making under-dilution easy to spot) but can stain some surfaces and is less common in beverage settings than the other two. Whichever type is in use, both dilution and contact time are non-negotiable: too weak a mix — or a bottle mixed from memory instead of measured — under-sanitizes even if it touches every surface, and too strong a mix isn't «extra safe»; it wastes chemical, can leave residue, and on some surfaces causes damage. Contact time — the surface needs to stay wet with sanitizer for a specific number of seconds, not be wiped dry immediately — matters as much as concentration, and test strips are the only reliable way to confirm a mixed solution is actually within range rather than assuming it.\n\nChemical storage and labeling are where a lot of otherwise-careful operations still slip.

Sanitizer should never be transferred into an unlabeled spray bottle, or one previously used for something else — a guest or coworker has no way to tell an unlabeled sanitizer solution from plain water or from a different, incompatible chemical, and that ambiguity is exactly how accidental ingestion or skin exposure happens. Chemicals should never be mixed together to «boost» cleaning power: chlorine-based and ammonia- or acid-based products in particular can react to release hazardous gas, and even chemicals that seem compatible should be used one at a time, rinsed between if needed, never combined in the same bucket or bottle.
