Fresh juice and smoothie fundamentals
Fresh juice can be extracted in two fundamentally different ways, and the method used changes the product's yield, oxidation, and shelf life as much as the produce itself does. Centrifugal juicers shred produce against a fast-spinning fine mesh, using centrifugal force to fling the juice out from the pulp; they're fast and handle a wide range of produce, but the high speed and blade action introduce heat and aerate the juice heavily, which accelerates oxidation and separation. Cold-press juicers — masticating or hydraulic-press — instead crush and press produce slowly at low speed with minimal heat and air incorporation, which yields more juice per unit of produce, a noticeably longer shelf life, and less oxidative color and flavor change, at the cost of a slower process and a higher-maintenance machine.
Neither method is strictly better for every use case: a busy bar juicing to order all day may favor a centrifugal juicer's speed, while a program bottling juice for retail shelf life will lean toward cold-press.\n\nRegardless of method, fresh juice is a living, unstable product from the moment it's extracted: exposure to air begins oxidizing it immediately, visible as color dulling and flavor flattening, and without the pulp still suspended evenly it will separate into layers within a short time. This is why fresh juice is handled on short hold times rather than treated like a stable syrup or dairy product — juiced in small batches sized to expected near-term demand, held cold, and discarded rather than refreshed with new juice once its hold window passes.\n\nSmoothies are built on a simple ratio logic once the base ingredients are chosen: fruit, fresh or frozen, for flavor and body; liquid — juice, milk, or a plant-based alternative — to let the blender actually move the mixture; and a thickener, such as yogurt, banana, nut butter, oats, or ice, to build the final texture. A common working starting ratio is roughly equal parts fruit and liquid by volume, with the thickener adjusted up or down from there depending on how thick the finished drink should be — too little liquid stalls the blender and leaves pockets of unblended fruit, while too much thins the drink past the point of feeling like a smoothie rather than a juice.
Frozen fruit or ice functions as both a chilling agent and part of the thickener, which is why recipes built around fresh fruit alone typically need added ice to reach a comparable texture and temperature.\n\nBecause fresh produce carries field and handling contaminants that don't get cooked out before it's juiced or blended raw, food-safety handling matters more here than in almost any other bar prep. All produce should be washed under running water immediately before cutting, including fruit whose skin will be removed, since a knife dragging across unwashed skin can carry contamination into the flesh. Cutting boards, knives, and juicer or blender parts used for produce should be kept separate from those used for raw meat or other high-risk ingredients to avoid cross-contact, and washed down between different produce items where allergens or strong flavors could transfer.
Given how quickly fresh juice and cut fruit degrade, short hold times under refrigeration — with clear discard times rather than an indefinite one — are the main control against both spoilage and the loss of quality that oxidation causes.
