Kefir

Energy: ~55 kcal / 100 ml (typical) (planning figure - the product label is the final reference)

How this figure was derived

Read from
~55 kcal / 100 ml (typical)
Energy density
55 kcal / 100 ml
Basis
Per 100 ml — a volume. Applying it to a weight would be wrong.
Example, at 30 ml
55 kcal / 100 ml × 30 ml ÷ 100 = ≈ 17 kcal

A planning figure, not a laboratory analysis. It is here so a recipe can be reasoned about, not so it can be declared on a menu.

How energy is derived

Shelf life: Per pack date; opened: refrigerate and use within a few days — it keeps fermenting slowly.

Storage: Cold chain ≤ 4°C, sealed; a little pressure build-up in the bottle is normal — open gently.

  • Kefir coolers with berry or mango purée
  • A tangier ayran-style drink over ice
  • Stir gently only — never steam or hard-whisk it; heat and shear kill the cultures

A fermented milk with a wider mix of live cultures than yogurt (probiotic). Slight fizz and tang are normal, not spoilage. Dairy allergen.
