Shelf life: Whole pods sealed: a year or more. Ground: the aroma fades within weeks — grind small batches.

Storage: Airtight, dark and dry, away from strong odours.

Crack the pods lightly just before they go in — pre-ground loses the top notes fast. For karak, the cracked pods join the tea for the simmer.
