Spindle mixer
Spins a small agitator disc inside a tall narrow cup to fold air into a thick frozen mixture and soften it, without shearing it down into a liquid.
A spindle mixer and a blender do opposite things and are bought as if they were alternatives, which is why one of them is nearly always the wrong machine. A BLENDER REDUCES: its blade cuts solids down until the mixture is uniform, which is exactly what a drink containing ice requires. A SPINDLE AGITATES: it turns a small shaped or perforated disc near the bottom of a tall narrow cup, drawing the mixture up the walls and folding it back down through itself. Applied to ice cream that incorporates air and softens the mass while leaving its structure intact — which is the entire difference between a milkshake and a cold sweet drink, and it is a difference a guest recognises immediately without being able to name it. The CUP IS PART OF THE MECHANISM, not a container: it is the proximity of the wall that makes the fold happen, so a spindle run in a wide vessel simply drills a hole through the middle and leaves the sides untouched. Speed is the control that decides which of the two behaviours you get — high speed thins toward liquid, lower speed folds — so a machine with one speed has one answer for every base on the menu. And because the mixing cup is usually not the serving vessel, a spindle is a two-vessel operation with a decant built into every drink, which is a labour cost and a spill risk nobody includes when comparing it to a blender.
- BUY FROM THE BASE, NOT FROM THE DRINK NAME. Write down what each thick drink on the menu actually starts from. Anything that starts from ice needs a blender and will stall a spindle. Anything that starts from ice cream needs a spindle and will be thinned into a cold sweet liquid by a blender. A menu with both needs both machines, and pretending otherwise is how a bar ends up with one item on the menu that is never quite right.
- Count heads against the ROUND, not against the day. These drinks are ordered in groups more reliably than anything else on a bar, so a single spindle facing a table of four is four sequential cycles plus four decants while the rest of the queue waits. The peak that matters is a table, not an hour.
- Choose variable speed as soon as the menu carries more than one base thickness. A single speed forces every recipe to fit one behaviour, and what actually happens is that the recipes quietly change to suit the machine until nobody remembers what was specified.
- Count CUPS the way you would count steaming pitchers: enough that one is always clean and dry while another is in use. The mixing cup is the consumable and the constraint on this machine, and when there is only one the rinse becomes a wipe and the wipe becomes nothing.
- Let the ALLERGEN MAP decide dedication, not throughput. Ice cream, nut pastes and plant bases through one spindle and one cup is a rinse-between-drinks arrangement, and a rinse is not an allergen control. If the menu makes a claim, dedicate a head and a cup set and make the dedication visible from across the bar.
- Treat the splash zone as a layout requirement rather than a nuisance. A spindle throws at the start of a thick cycle and again if the cup is lifted early, so put it where the throw lands on a cleanable surface — never facing the espresso lane, never over an open ice store, and never where it reaches the pass.
- Cost the decant. Most spindles mix in a cup that is not the serving vessel, so every drink includes a pour, a scrape and a second item to wash. Compare that against a blender honestly before deciding the spindle is the simpler machine.
- Confirm the electrical position with a licensed electrician before the joinery is fixed. It is a motor load started many times an hour, and whether it shares a circuit is a question of the total connected load at the station and the local code. This site states no amperage.
