Shelf life: Draw fresh as needed. The real shelf life here is the filter cartridge — log its change date and replace it on schedule.

Storage: Straight from the filtration system; keep the dispensing point and lines clean.

• The brewing water for espresso and filter — flavour starts in the water
• Base water for karak and every tea and herbal infusion
• Feeds the ice machine — ice is only as clean as its water

Target roughly the SCA guideline of ~150 ppm TDS for brewing water: much softer and the cup tastes hollow, much harder and the boiler scales. Check with a TDS meter periodically and after every cartridge change, and log the readings.
