Ice storage bin

Holds produced ice between the steady rate a machine makes it at and the bursts a bar takes it in — which makes it, not the machine, the component that decides whether you run out.

A bin is an insulated box with a drain and a level control, and each of those three does something operators are surprised by. THE INSULATION IS NOT REFRIGERATION. On most configurations the bin has no cooling of its own — the contents are held by their own cold, they melt continuously, and the melt runs to drain. That loss is real and it is largest overnight, when nobody is opening the lid and nobody is watching. THE LEVEL CONTROL STOPS THE MACHINE. When the bin is satisfied the machine shuts off, which means a bigger bin does not produce more ice — it lets the machine run longer before it cuts out, so the standing stock at the start of a rush is higher. That is the entire mechanism by which bin size affects whether a bar runs dry, and it is why bin capacity belongs in the sizing calculation and not in the accessories list. THE BIN IS THE BUFFER between a producer that is roughly flat and a consumer that is anything but, so the sizing question is not how much ice a day consumes but how deep the buffer has to be to survive the worst burst before production catches up. One property has nothing to do with capacity and outranks it: a bin is an OPEN FOOD CONTAINER at ambient temperature that hands, scoops, cups and occasionally glassware go into, holding an ingredient that is served without any further treatment. Everything about how ice leaves the bin is therefore a food-safety decision wearing a convenience decision's clothes.
