Ice storage bin
Holds produced ice between the steady rate a machine makes it at and the bursts a bar takes it in — which makes it, not the machine, the component that decides whether you run out.
A bin is an insulated box with a drain and a level control, and each of those three does something operators are surprised by. THE INSULATION IS NOT REFRIGERATION. On most configurations the bin has no cooling of its own — the contents are held by their own cold, they melt continuously, and the melt runs to drain. That loss is real and it is largest overnight, when nobody is opening the lid and nobody is watching. THE LEVEL CONTROL STOPS THE MACHINE. When the bin is satisfied the machine shuts off, which means a bigger bin does not produce more ice — it lets the machine run longer before it cuts out, so the standing stock at the start of a rush is higher. That is the entire mechanism by which bin size affects whether a bar runs dry, and it is why bin capacity belongs in the sizing calculation and not in the accessories list. THE BIN IS THE BUFFER between a producer that is roughly flat and a consumer that is anything but, so the sizing question is not how much ice a day consumes but how deep the buffer has to be to survive the worst burst before production catches up. One property has nothing to do with capacity and outranks it: a bin is an OPEN FOOD CONTAINER at ambient temperature that hands, scoops, cups and occasionally glassware go into, holding an ingredient that is served without any further treatment. Everything about how ice leaves the bin is therefore a food-safety decision wearing a convenience decision's clothes.
- Size the bin against the WORST BURST, not against the day. The question is what the bar draws in its busiest hour and what will be standing in the bin when that hour starts, because the bin has to cover the difference between that draw and what the machine manages during the same hour. No machine specification can answer this for you and no supplier will ask it.
- Then go and look at the bin at opening, every day for a week, before you believe any figure you calculated. Overnight melt, an unusually long close, a machine that cut out early — all of them change what the morning actually starts with, and the observed answer is worth more than the derived one.
- Buy the bin separately from the machine wherever the space allows. They answer different questions, they fail at different times and for different reasons, and separating them lets you fix the one that is actually wrong. A bar that runs out at peak more often needs a bigger buffer than a faster machine.
- DECIDE HOW ICE LEAVES THE BIN BEFORE YOU BUY IT, because that decision is the hygiene control and everything else is commentary. A scooped bin needs a scoop, a holder mounted outside the store, and enough spare scoops that a dropped one is replaced rather than rinsed. A dispensing head removes the route entirely and adds a cleaning routine of its own. There is no third option in which a rule alone holds under pressure.
- Buy a bin you can physically empty and reach the back of, at the height it will actually be installed at. Ice is a first-in-never-out problem that nobody treats as one: in a large or tall bin the ice at the back can sit for weeks, absorbing whatever is in the air and fusing into a mass, while the front is scooped and refilled indefinitely. If the back cannot be reached with an arm, it will not be cleaned and it will not be rotated.
- Confirm the drain before the delivery. A bin drains continuously, the run must fall the whole way, and a blocked or climbing drain leaves a food store sitting in its own melt. Termination, trapping and whether an air gap is required are set by the local plumbing code and confirmed by a licensed plumber.
- Put emptying and sanitising the bin on the cleaning schedule as its own line with its own frequency, and check that the frequency is one the bar can actually meet — the store has to be run down first, which means it happens at a specific time of week or it does not happen. - If ice will be carried to the bar, specify the tote and the rule together. Insulated, drainable, nestable, washed between fills, never left standing full, and emptied by a named person at a stated point in the shift. A transfer container without a rule is a second store nobody cleans.
