Ice quality and safety
Ice is a food ingredient like any other — it goes directly into a customer's drink — and treating it that way is the core of ice safety. Ice machines are also, unfortunately, ideal environments for mold and bacterial slime to grow: they're dark, cool, and constantly damp, and residue from airborne yeast, mold spores, and mineral buildup accumulates on interior surfaces and the storage bin over time, which is why manufacturers specify regular interior cleaning and sanitizing on a fixed schedule rather than only when buildup becomes visible. Hands should never touch ice directly; scoops — stored outside the bin in a clean holder, never buried inside the ice — or a built-in dispenser are the standard, since bare hands introduce bacteria from skin contact and can cross-contaminate an entire bin from a single touch.
Clear versus cloudy ice comes down to how the water freezes: clear ice forms when freezing is slow and directional, letting dissolved air and minerals escape ahead of the freezing front, while cloudy ice results from fast freezing that traps air bubbles and impurities throughout the cube as it solidifies; cloudiness alone isn't a safety issue, but it's often a sign that a machine's water filtration or freeze cycle needs attention. Scoops and bins should be cleaned and sanitized on the same schedule as the machine itself, ice should never be stored in a bag or container that previously held raw food or chemicals, and the bin's drain should stay clear so melting ice doesn't sit in standing water. Treating ice with the same handling standards as any other ready-to-eat food item is the simplest way to keep it from becoming a source of contamination.
