Strainers
Holds back ice and solids while the liquid leaves the tin, at whatever coarseness the drink actually needs.
Three different tools with three different jobs, routinely bought and used as though they were one. A coil-spring strainer sits inside the tin with the spring bearing against its wall; the spring itself is the filter, and pushing the gate forward tightens the gap while pulling it back opens it, so the operator sets the coarseness at the moment of pouring. A perforated-bowl strainer is a solid dished plate held against the ice in a mixing glass — it holds back cubes and nothing finer, which is exactly what a stirred drink needs and nothing more. A fine-mesh conical strainer is a SECOND stage, held over the glass while the drink is poured through the first: it catches everything the coil lets past, which means ice shards, fruit pulp, seeds and herb fragments. That two-stage pour is what double straining means, and the mechanism explains when it is required rather than optional: a coil strainer's gap is coarse by design and cannot be made fine, so anything shaken with pulp, seed or leaf arrives in the glass unless a finer stage exists. The spring is also the wear part. A spring that has lost tension no longer seals against the tin wall, and it starts letting shards through at precisely the boundary the operator believed they were controlling.
- Match the strainer to what is actually in the drink, and go through the menu line by line before ordering anything. A drink shaken with citrus pulp, berry seed or torn leaf needs a fine second stage and no adjustment to a coil strainer will substitute for it; a stirred drink over cubes needs nothing more than a perforated bowl. Buying one type for the whole bar guarantees that half the menu is served through the wrong tool.
- Decide the double-straining rule per drink and write it on the card, because it is a step that is skipped under pressure and is invisible afterwards. Anything served with a straw is the obvious candidate: a seed or a leaf fragment blocking a straw is the drink failing in the guest's hand, which is a worse outcome than most of the faults on this page.
- Treat the spring as a consumable and check its tension deliberately, because this is the failure that arrives gradually and gets blamed on technique. A slack spring stops sealing against the tin wall and lets shards through while looking completely normal, and the first sign is ice in a glass that should not have any.
- Count the mesh strainers against the wash cycle, not against the drink count. A mesh used once needs cleaning before it is used again, so a bar with one mesh strainer is a bar that either rinses it in a hurry or stops double straining at peak — and both of those decisions are being made by the equipment, not by the operator.
- Look at how each tool cleans before you look at how it pours. A woven mesh, a coil spring and a lid seam are all places pulp and sugar lodge, and all three are on tools that touch the finished drink. Anything that cannot be brushed out and dried belongs off the list, however good it feels in the hand.
- If double straining is needed on most of the menu, treat that as a menu question rather than an equipment one. Two stages on every drink is real time at peak, and either the throughput has to accommodate it or the recipes should be built from strained components in advance — which is a decision worth taking deliberately rather than discovering during a rush.
- Buy one full set per build station. A strainer being carried between stations is a strainer that is somewhere else when the tin is ready, and a poured drink does not wait — which is how a drink gets tipped through a coil strainer that everyone knew was too coarse for it.
