Pour-over methods: V60, Kalita Wave, Chemex, and Origami

All pour-over methods share a bed of grounds, a filter, and manually controlled water — but the dripper's cone angle and hole design change the brew significantly. V60's steep 60° cone and large single center hole drain fast, so the pour schedule (how much water, how often) does most of the control work — favoring bright, clean, high-clarity cups. Kalita Wave's flat bottom with three small holes drains more evenly and predictably regardless of pouring skill, producing a consistent, balanced cup that's more forgiving of imperfect technique.

Chemex uses a thick, proprietary filter paper and a wide, boxy cone, which restricts flow and traps more fine sediment and oils than most other pour-over filters — the result is an exceptionally clean, tea-like cup, usually brewed at a larger batch size. Origami's ridged cone can accept either a cone or flat-bottom filter, making it flexible enough to mimic either a V60-style or Kalita-style extraction depending on the filter used. Across all of them, the same fundamentals apply: rinse the paper filter first to remove papery taste and preheat the vessel, bloom the bed with a small amount of water first to let trapped CO₂ escape evenly, then pour in controlled stages rather than one continuous dump — a channeled or uneven bed is the most common cause of an inconsistent cup regardless of which dripper is used.
