  3. Steep at room temperature or refrigerated for 16–18 hours.
  4. Filter thoroughly — a paper filter, fine mesh, or dedicated cold-brew filter — to remove fine sediment.
  5. Refrigerate the finished concentrate immediately at 4°C or below.
  • Low acidity, naturally sweet, smooth — this is expected from the cold, slow extraction, not a fault.
  • Discard the batch at 7 days from brew date without exception, and record the discard.
