Passion Fruit Cooler (Zero-Proof)

A quick, non-alcoholic build of tropical passion-fruit purée, fresh citrus, and soda over full ice. No muddling is needed, making this a fast, high-throughput service drink with a tart, aromatic finish.

Operating procedure
- Chilled highball or tumbler glass (approx. 350 ml) on the pass.
- Passion-fruit purée, strained if very seedy, chilled in a squeeze bottle.
- Fresh lemons and limes cut to order.
- Sugar syrup at 1:1 ratio, cold and ready.
- Chilled soda water charged and ready.
- Bar spoon sanitized.
- Optional fresh passion-fruit halves reserved for garnish.
- Pour 40 ml passion-fruit purée into the glass.

- Add 20 ml fresh lemon or lime juice and 15 ml sugar syrup.
- 20 ml fresh citrus; 15 ml sugar syrup
- Stir briefly with a bar spoon to combine the purée and syrup evenly.
- Fill the glass completely to the rim with fresh ice cubes.
- Top with chilled soda water and give one gentle lift to combine.
- Garnish with a fresh passion-fruit half floated on top or a citrus wheel; serve with a straw.
- Aroma is intensely tropical and the flavour is tart-forward, not cloying.
- Colour is a clear golden-orange; the drink is not muddy from unstrained pulp when a clean look is wanted.
- Carbonation is lively and sweetness is balanced; adjust sugar syrup by 5 ml to taste.
Passion fruit is naturally very tart, so this build leans on a touch more sugar syrup than the sparklers. Leaving a few seeds in adds visual appeal.
