Alcohol-free drink build

Applies to: any à-la-minute alcohol-free drink built and served on demand, whether shaken, stirred, or built directly in the glass.

Target: under 3 minutes from order to garnish, with cold temperature maintained throughout the build.

  • Pre-batched syrups, cordials, shrubs, and juices are labelled, dated, and confirmed within their use-by window before service starts.
  • Garnish station stocked and prepped: citrus twists or wheels cut, herbs washed and dried, any rimming salt or sugar plated separately.
  • Glassware chilled or at room temperature per the recipe spec, and free of water spots or residue.
  • Ice bin filled with fresh, clear ice; no partially melted or off-odour ice in the well.
  • Recipe card or menu spec on hand for build order, ratios, and garnish — never poured from memory alone on a new or seasonal item.
  1. Confirm the recipe spec — ratios, glassware, garnish — before starting; pull a fresh recipe card for any drink not yet muscle-memorised.
  2. A guessed ratio is the most common cause of an inconsistent zero-proof drink — check the card, don't estimate.
  3. Fill the mixing tin or glass with fresh ice first, then add the modifiers (syrups, shrubs, juices) followed by the base (soda, tonic, sparkling or still water) — or follow the recipe's specified build order when it differs.
  4. Reversing the order dilutes the drink unevenly and can make syrups sink and layer instead of blending.
  5. Choose the technique: shake components with juice, dairy-alternative, or foaming modifiers to aerate and chill fast; stir clear, spirit-adjacent builds over ice to keep them silky and clear; build directly in the glass when a layered or carbonated presentation is wanted.
  6. Shaking a carbonated component flattens it — always add sparkling elements after shaking or stirring, never before.
  7. If shaken, shake hard for 10-15 seconds until the tin is frost-cold to the touch, then strain.
  8. Double-strain (Hawthorne plus fine mesh) any shake containing muddled fruit, herbs, or pulp to keep the texture clean.
  9. Pour or strain into the specified glass over fresh ice (or straight up, per recipe), leaving headroom for garnish and any carbonated top-up.
  10. Pouring to the rim leaves no room for the carbonated top-up or garnish and forces an overflow at the table.
  11. Garnish last, per the recipe spec, and serve immediately — garnish added early wilts, browns, or loses its aromatic lift before the guest receives the drink.
  • Drink matches the recipe's visual spec: colour, clarity or foam cap, ice level, and garnish placement.
  • Any shaken drink shows a cold, tight foam cap (where applicable) with no visible ice shards or pulp fragments after straining.
  • Served within the target time window and at the correct temperature — a warm or over-diluted drink is remade, not served.

An alcohol-free drink is built with the same precision as any other bar drink: consistent ratios, correct technique, and a repeatable spec — never a free-pour improvisation. Pre-batched components are perishable; label, date, and rotate them FIFO, and discard anything past its use-by window.
