Steaming technique across plant milks: oat, soy, almond, coconut

Knowing that plant milks behave differently under steam is only half the picture — the other half is what a barista actually does differently with the wand. Oat milk (barista formulations especially) generally foams readily and holds structure close to dairy, so the main risk is the opposite of thin foam: over-stretching or over-steaming can push it toward a gummy, overly thick texture, so a shorter stretch phase and stopping slightly earlier than a dairy routine usually gives a cleaner result. Soy milk foams well when fresh, since its protein content is relatively close to dairy's, but that same protein is more sensitive to the combination of high heat and the acidity of espresso — hit it with both at once and it's prone to visibly splitting or curdling, so the practical fix is steaming gently, keeping the temperature ceiling a touch lower than a dairy routine, and letting a shot cool slightly before combining rather than pouring straight off the group head.

Almond milk has less protein and fat to stabilize bubbles, so its foam tends to come out thinner and coarser and collapses faster; a gentler stretch, a shorter overall steam time, and staying toward the cooler end of the usual range all help it hold together a little longer, though it will rarely match dairy's microfoam gloss. Coconut milk is fat-heavy but protein-light, and fat alone doesn't hold air the way protein does, so its foam is often the least stable of the four — thin, quick to collapse, and unforgiving of an aggressive stretch — which is why many bars steam it briefly and gently and pour promptly rather than chasing latte-art-grade foam. Across all four, the pattern repeats: less protein generally means a lower practical temperature ceiling, a shorter or gentler stretch phase, and a faster pour once foam is ready, since fragile foam doesn't wait well.
