Pomegranate Citrus Refresher (Zero-Proof)

A jewel-toned, non-alcoholic refresher of pomegranate syrup or juice, fresh lemon, and soda over full ice, finished with fresh pomegranate seeds. This SOP balances the fruit's deep sweetness against bright citrus acidity.

Operating procedure
- Chilled highball glass (approx. 350-400 ml) on the pass.
- Pomegranate syrup or 100% pomegranate juice, chilled.
- Fresh lemons cut to order.
- Sugar syrup at 1:1 ratio on hand for fine-tuning.
- Chilled soda water charged and ready.
- Bar spoon sanitized.
- Fresh pomegranate seeds reserved in a small chilled container for garnish.
- Pour 30 ml pomegranate syrup (or 45 ml pure pomegranate juice) into the glass.

- If using pure juice, add 10-15 ml sugar syrup to taste; if using sweet syrup, skip or add only a splash.

- Fill the glass completely to the rim with fresh ice cubes.
- Top with chilled soda water and lift gently once or twice to combine.
- Scatter a spoonful of fresh pomegranate seeds on top and add a lemon wheel; serve with a straw.

- Colour is a deep, clear ruby, not dulled by over-dilution.
- Sweet-tart balance is clean and refreshing; lemon should cut the pomegranate, never be buried by it.
- Seeds are fresh and sink slowly, giving a jewelled look; carbonation stays lively.
Sweetness varies hugely between pomegranate syrup and pure juice, so always taste and adjust the sugar syrup. Rinse the seeds and drain well so they float cleanly.
