Waste separation and bin housing
Takes solid waste out of the barista's hand at the point it is generated, holds it hygienically until it leaves, and keeps the streams that must stay apart apart.
The controlling mechanism is distance, and it is the same arithmetic as the hand-wash basin: waste goes wherever it is quickest to put it down, so an opening at the point of generation is the whole design and everything else is a container. A bar generates several genuinely different streams at once and they behave differently. Spent coffee is heavy, wet and acidic, and it is the stream that decides bin weight — a bin sized by volume fills with grounds to a weight one person should not be lifting, which is why the knock box exists as a separate vessel emptied on its own rhythm rather than as a bin liner's problem. Milk, syrup and juice residues are the sugar-and-protein stream, and they are what makes a bar bin smell within hours rather than days, especially in a warm room. Packaging is bulky, dry and mostly clean. Front-of-house waste is mixed and largely outside the team's control. Those four want different frequencies, different container types and different positions, and the single most common design error is a single bin trying to be all of them. Two consequences follow. First, a sealed bin housing under a counter concentrates odour and, because it is out of sight, becomes the thing nobody checks — so the housing needs ventilation, a wipeable interior and access that does not require moving anything. Second, the moment a stream is separated for recycling or for a landlord's contract, separation must be physical at the point of disposal, because nobody re-sorts a mixed bin later. Liquid waste is a different subject with a different failure mode and it is owned by the bar drainage entry in the water category; nothing here duplicates it.
- Put an opening where the waste is generated, and count the streams from what the bar actually produces in a shift rather than from a recycling policy. Spent coffee, sugar-and-protein residue, packaging and front-of-house waste behave differently and want different frequencies.
- Size the bin by WEIGHT, not by volume, wherever spent coffee goes into it. Grounds are heavy and wet, and a container that is the right volume can be a container one person should not lift — which produces both an injury exposure and a bin that gets dragged rather than carried.
- Keep the knock box as its own vessel on its own emptying rhythm. Merging it into the general bin adds the heaviest, wettest stream to the container that is emptied least conveniently, and it takes the grounds away from the station where they were being knocked out in one motion.
- Ventilate and light any enclosed bin housing, and make the container removable without moving anything else. An enclosed void with a wet sugary load in a warm room is the single most reliable way to give a bar a smell that cannot be traced.
- Specify the interior of the housing as a washable surface with a coved or sealed base, because liner failures are normal and the housing is what catches them. A raw board interior is a permanent absorbent surface underneath the wettest thing in the bar.
- Confirm what is actually collected, separately, before you build separated openings. A stream separated at the bar and recombined at the back door is cost and staff effort spent on nothing, and it teaches a team that the separation does not matter.
- Plan the route from bin to the external store as a real path: through which door, past which surfaces, at what time of day, and where the person washes their hands afterwards. A route that crosses a prep surface is a cross-contact route that appears on no diagram.
- Make emptying and washing the container itself two separate named tasks, because relining a bin is not cleaning it and only one of the two ever gets done unattended.
