Lighting at the working plane
Lets the team see what they are actually doing at the counter, and lets the drink be judged by the eye before it leaves.
Three properties of light matter behind a bar and they are usually confused with one another. The first is HOW MUCH arrives at the working plane, which is not the same as how bright the room looks: a bar lit generously from the ceiling can still be dark where it matters, because the person working stands between the source and the work and casts a shadow onto exactly the surface they are looking at. That single geometric fact is why task lighting exists as a separate layer from room lighting, and why a light in front of the working position outperforms a brighter one behind it. The second is COLOUR RENDERING — how faithfully a light source lets real colours be distinguished. It is the property that decides whether the crema on a shot can be read, whether milk texture can be judged in the jug, whether fruit can be assessed as fresh or turning, and whether a colour-coded system means anything at all. A source that makes the room look pleasant and renders colour poorly quietly removes every visual quality check a bar performs. The third is GLARE and contrast: a bright source in the visual field, or a specular reflection off a polished counter or a stainless surface, both reduce what can actually be seen and tire the eye over a shift, and dark cabinetry beside a bright working plane forces the eye to re-adapt every time it moves. All three then meet a fourth constraint that is unique to this room: lighting is a heat source, and it is on for the whole trading day directly above the working position. That belongs in the ventilation assessment. What is not stated here is any illuminance figure, any colour-rendering index value or any colour temperature. The required level at the working plane is a matter for local code and the lighting or electrical designer, and it is confirmed by them against the room; what this entry can say is what to specify against and what wrong looks like.
- Specify light AT THE WORKING PLANE, not in the room, and specify it with a person standing where they will stand. The body shadow is the defect and it is invisible on a lighting plan, which shows an empty counter.
- Make colour rendering a stated requirement rather than an assumption. Crema, milk texture, fruit condition and any colour-coded system all depend on it, and a source that renders colour badly removes those checks silently while making the room look fine.
- Ask for the bar's working light to be separately switched and separately dimmed from the room, at first fix. It costs almost nothing then and cannot be added later without opening finishes, and without it the counter goes dark whenever the room is set for the evening.
- Provide a full-brightness cleaning setting, because closing is done at the end of a long shift on tired eyes and it is when the bar is inspected most closely and seen least well.
- Control glare and reflection deliberately. Shield any source in the visual field, and check what a polished counter or a stainless surface does with it — a specular reflection into the eye of either the barista or the customer is a defect even when the illuminance is correct.
- Recheck aim and shadow AFTER the equipment is installed. Lighting is commissioned on an empty counter and used on a full one; the espresso machine and the grinder are exactly the height that creates a shadow on the work behind them.
- Include the lighting in the room's heat assessment. It is on all day, directly above the working position, and it is routinely left out of the list of heat sources when ventilation is sized.
- Confirm the required level and any code obligation with the lighting or electrical designer, in writing. What is required at a working plane in a food area is a code matter and it is theirs to state, not a supplier's and not this platform's.
