Calibrated tamper

Compresses the dosed grounds into a level, uniformly dense puck so the water arrives at one resistance instead of several.

Two things happen when a tamper enters a basket and only one of them is the thing operators argue about. The argued-about one is force. Past the point where the bed stops compacting, extra force changes very little — the puck is already about as dense as it is going to get, and the barista is now just loading their wrist. The one that decides the shot is LEVEL. A tamp even slightly off horizontal leaves the bed thinner on one side, and water takes the thin side, every time, on every shot, until somebody notices. The third variable is fit: a tamper narrower than the basket's inside diameter cannot compress the ring of grounds at the wall, and that unsupported ring is a channel already built. A calibrated tamper adds a spring that yields at a set load, and its real value is not the number the spring is set to — it is that force stops being a per-barista variable, so a team of five produces five pucks that behave the same way. On most designs the mechanism only releases cleanly when the tamper is square, which makes it a levelness trainer as much as a force limiter, and that is the half of the benefit nobody puts on the box.
