Matching grind size to brew method
Grind size and brew method are locked together by one variable: how long water is in contact with the coffee, and how much resistance the grounds offer to that water. Espresso relies on pressure (roughly 9 bar) forcing water through a tightly packed puck in 25–35 seconds, so it needs a fine grind — close to table salt or slightly finer — to create enough resistance to slow the water down and build the contact time and pressure needed for a full extraction in such a short window. Pour-over is a gravity-driven, non-pressurized method with a 2–4 minute contact time, so it needs a medium grind — closer to granulated sugar or coarse sand — that lets water flow through steadily without stalling the bed, while still holding contact long enough to extract fully.
French press is a full-immersion method with a 4-plus minute steep and no filter paper to catch fine particles, so it needs a coarse grind — closer to sea salt or breadcrumbs — both to keep contact time from over-extracting the coffee and to keep the mesh plunger filter from clogging or letting a slurry of fines through into the cup. Cold brew trades heat for time: it steeps for 12–24 hours at room or fridge temperature, so it needs an extra-coarse grind — closer to peppercorns — because without heat to speed extraction, a finer grind left that long would extract far past balance into harsh, bitter territory; extra-coarse keeps the long steep landing in the same place a hot method reaches in minutes. Turkish coffee inverts the whole logic: it's simmered unfiltered, grounds and all, in the final cup, so it needs a flour-fine grind — finer than espresso, almost powder — so the particles suspend in the liquid and settle to a soft sediment rather than staying gritty on the tongue.
Mismatching grind to method shows up as a fairly predictable set of faults. Espresso ground too coarse channels — water finds the path of least resistance through the puck, extracting that channel heavily while starving the rest, and the shot runs fast, thin, and sour; too fine and it chokes, running slow or not at all, or over-extracting into bitterness if it does eventually pull through. Pour-over too coarse under-extracts into a weak, sour, tea-like cup because water passes through before it can pull enough solubles out; too fine runs slow, can stall the pour entirely, and over-extracts into bitterness.
French press too fine leaves a muddy, silty cup with grit on the tongue and often tips into over-extraction from the extended steep; too coarse leaves it thin and underdeveloped. Cold brew too fine turns cloudy and bitter and is a nightmare to filter clean; Turkish too coarse never suspends properly and settles as coarse, unpleasant grit instead of the fine, almost velvety sediment the method is built around.
