How to use / SOP

Purpose

Keep a structured record of every bean on hand — origin, roast, process — and know at a glance which bags are in their best flavor window.

Standard

General guidance: beans typically need about 5 days post-roast to finish degassing, are often best within roughly 3 weeks of roast date, and decline afterward — this varies by bean, roast level and packaging, so taste is the final judge.

Steps

  1. Log each bag as it arrives: name, origin, farm, altitude, density, roast level, moisture % and process.
  2. Set the roast date so the rest tracker can compute days since roast.
  3. Check the rest status before brewing a new bag — if it's still degassing, expect more crema/CO2 and less clarity.
  4. Use the comparison chart to spot bags that are unusually dry or wet relative to the rest of your stock.

Reading the result

"Still degassing" doesn't mean unusable — just expect a less settled shot. "Past typical peak" is a prompt to taste-check and rotate stock, not an automatic discard signal.

Notes

These are general specialty-coffee guidelines, not a food-safety rule — always taste-test before assuming a bag is bad.
