Berry Mint Sparkler (Zero-Proof)
The classic zero-proof mint-lime sparkler build enriched with a measured strawberry or mixed-berry purée for colour, body, and fruit-forward sweetness. This SOP keeps the mint gentle while balancing added fruit sugar.

- Chilled highball glass (approx. 350-400 ml) ready on the pass.
- Strawberry or mixed-berry purée, strained and chilled, in a squeeze bottle.
- Fresh limes cut to order and fresh mint sprigs held in ice water.
- Sugar syrup at 1:1 ratio, pre-batched and cold.
- Chilled soda water charged and ready.
- A few whole berries reserved for garnish.
- Muddler and bar spoon sanitized and within reach.
- Squeeze 25-30 ml fresh lime juice into the glass with 8-10 mint leaves.

- Press the muddler down 4-5 times to bruise the mint gently; never shred it.

- Add 30 ml berry purée and 15 ml sugar syrup, then stir once to loosen the purée.

- Fill the glass completely to the rim with fresh ice cubes.
- Top with chilled soda water and lift gently 2-3 times with a bar spoon to marble the colour without flattening the fizz.
- Garnish with a mint sprig and a whole berry or a fanned strawberry on the rim; serve with a straw.
- Colour is a clean pink-to-red gradient, not muddy or fully mixed to flat.
- Sweetness stays balanced by lime acidity; reduce sugar syrup by 5 ml if the berry purée is already sweet.
- Fizz is lively and the mint aroma still comes through over the fruit.
Always strain the purée for a clean pour and unclogged straws. Taste your purée first; berry sweetness varies by batch and season.
